Bij UMAMI by Han draait alles om social dining. Het delen van eten brengt mensen dichter bij elkaar. Dit is een belangrijk uitgangspunt in de Chinese cultuur.
Oriental Bar & Kitchen UMAMI by Han Amsterdam is een modern restaurant waar je kan genieten van een snelle zakelijke lunch (40 minuten), van speciale thee's en koffie's, overheerlijk Asiatisch finger food, of een uitgebreid 3-gangen diner waarbij iedereen 6 gerechtjes krijgt om te delen.
UMAMI by Han Amsterdam maakt gebruik van verse ingrediënten, lichte gerechten en samen met de ruime diversiteit aan verse sappen en thee combinaties maakt dit een super match met de gezonde visie van chef Han Ji.
Naast zoet, zuur, zout en bitter, wordt umami wetenschappelijk erkend als de vijfde basissmaak. Umami komt voort uit het Japans en betekent letterlijk ‘heerlijke smaak’. Dit omdat de meeste ingrediënten die een hoge hoeveelheid umami bevatten veelal als ‘heerlijk’ worden ervaren.
Umami-ingrediënten worden veel in Chinese keukens gebruikt. Denk aan verse zalm, sojasaus, rijstwijn en paddenstoelen. De term is weliswaar niet overal even bekend, maar de smaak kennen wij onbewust al veel langer.

We came here because we were told that the food was amazing, portions are well sized and it is worth the experience. Even with the optional dishes we left hungry, both of us enjoyed only on of the total 10 or 11 dishes that we had. Everything was way too oily, and completely lacking flavour. The portion sizes were a joke honestly, especially the 4 micro-bites of iberico ribs (which were mostly fat anyways, not even meat). It felt like the leftovers of other people were served as the Amex Dining.
Amazing staff though, everyone was super kind and helpful, so kudos for that, but I will never return here.
