Description
Justin Koopman, a talented chef who has earned his stripes at renowned restaurants such as FG**, Parkheuvel**, and 't Ganzenest*, works from a French foundation, enriched with his own Mediterranean influences. His dishes are characterized by the use of top-quality ingredients, herbs, and spices. His vision is to give classic elements, such as the grand dessert, a contemporary and refined twist. “I’m proud that we get to start our own restaurant here, and I look forward to surprising our guests time and time again,” says Justin.
Indy Chiron Akkermans, the hostess of the duo, has gained extensive experience at top restaurants such as HMB, Amarone*, Fred**, and FG**, and will elevate the hospitality at Aan de Zweth to the next level. “We’re excited about the extras this location offers, such as the lounge, the private dining room, and the terrace by the water,” says Indy. “We want to bring our own touch to the restaurant, but for regular guests, not much will change.”
The couple is determined to continue the legacy of Aan de Zweth, which has been a culinary institution for over 35 years, as a place where guests can enjoy refined cuisine and top-tier service. With a young and driven team, they aim to let the restaurant flourish even further.

Nieuwe naam, nieuwe chef, maar nog steeds de omweg waard. Man wat was dat lekker.
Wij hebben hier gegeten tijdens de restaurantweek. 3 gangen diner. Het was echt een smaaksensatie. Zulke goede combinaties. In een woord fantastisch. Het personeel is informeel gekleed in spijkerbroek, overhemd en bretels. Ze zijn vriendelijk maar zakelijk. Ook de prijs van de drank was tegen onze verwachting in goed geprijsd. Kortom aanrader.
Hier afgelopen zaterdag tijdens restaurantweek geluncht. De locatie is en blijft fantastisch. Het ronde restaurant zorgt voor veel sfeer en prachtig uitzicht, juist overdag. Binnenkort gaat de tuin weer open! Met uitzondering van het dessert hebben we uitstekend gegeten inclusief wijn arrangement. Het bedienend pers...

Het bedienend personeel is zeer deskundig zowel wat betreft het eten als de wijn. Tempo is goed ook als het druk is. Het "denim met bretels tenue" van het personeel vinden wij iets minder geslaagd.
