Description
Justin Koopman, a talented chef who has earned his stripes at renowned restaurants such as FG**, Parkheuvel**, and 't Ganzenest*, works from a French foundation, enriched with his own Mediterranean influences. His dishes are characterized by the use of top-quality ingredients, herbs, and spices. His vision is to give classic elements, such as the grand dessert, a contemporary and refined twist. “I’m proud that we get to start our own restaurant here, and I look forward to surprising our guests time and time again,” says Justin.
Indy Chiron Akkermans, the hostess of the duo, has gained extensive experience at top restaurants such as HMB, Amarone*, Fred**, and FG**, and will elevate the hospitality at Aan de Zweth to the next level. “We’re excited about the extras this location offers, such as the lounge, the private dining room, and the terrace by the water,” says Indy. “We want to bring our own touch to the restaurant, but for regular guests, not much will change.”
The couple is determined to continue the legacy of Aan de Zweth, which has been a culinary institution for over 35 years, as a place where guests can enjoy refined cuisine and top-tier service. With a young and driven team, they aim to let the restaurant flourish even further.

Van amuse tot toetje hebben we genoten van de heerlijke gerechten. Het heeft allemaal zo'n mooi smaakpalet, dat ik niet meer kan herhalen wat er in zat. Bediening is ook professioneel en vriendelijk. Wij hadden voor de lunch gekozen, maar de bijgerechten zagen er op papier ook heerlijk uit en dat had ik bij een diner zeker uitgeprobeerd! Wij komen hier zeker weten terug.
Het was voor ons de 2e keer dat wij via de restaurantweek geboekt hebben.
Het was opnieuw weer heerlijk maar je merkte dat overgedragen was aan een nieuwe gastheer. De vorige keer ging het allemaal wat perfecter. Het eten was perfect.
In de schaduw van enkele bomen genoten wij van een 3 + 2 gangen lunch.
Alle gerechten voortreffelijk, uitblinkers de tongscharfilets en het prachtige stukje kalfsvlees. Met maaltijden van deze klasse wordt eventueel heimwee naar de Zwethheul volkomen verdreven.
